I love having these on hand.  You don't even need to defrost them.

1 medium Onion, sliced on the thick side

3-4 Frozen chicken breasts

Garlic powder, onion powder, parsley, pepper, EVOO, and a dash of Red hot pepper

Put the EVOO in a skillet pan, add the onions, saute just for a minute.  Lay the frozen chicken breasts right on top of the onions.  Sprinkle seasonings over the chicken.  Place a cover over chicken and turn to medium heat.  Cook approx 6-7 minutes.  Turn chicken over.  Place cover back over chicken and cook another 6-7 minutes. Remove cover and drain any excess liquid.  Then, turn up the heat to high and brown chicken and onions, approx 5-6 minutes longer. Serve with rice or scalloped potatoes and a salad.
